The oysters of Mali Ston Bay have been prized since Roman times — and they still never travel further than the bay itself. Here, you taste them metres from where they grow, lifted from the sea in front of you by the family that farms them.

Chapter I
On the water
A small boat carries you out across the stillest water on the Adriatic coast, between ropes heavy with shells. Your host — an oysterman whose family has worked this bay for generations — pulls a cluster from the sea, opens one against the gunwale, and hands it to you. It tastes of exactly here: salt, stone, and cold clean water.
Chapter II
The floating table
Lunch is served on a private dock floating in the bay — oysters and mussels by the dozen, grilled fish, local Pošip kept cold in the sea itself. Behind you, the great stone walls of Ston climb the hillside; around you, nothing but water, shellfish ropes, and time.
